What would you say about computers, you can't live with them, you can't live without them? I would say most definitely `respect them'. Most of us carry our lives in our little lap tops, so that when they don't work, we feel like an amputee. I say this with recent first hand experience having my lap top crash the evening before launching the magazine. The computer went into `I'm not playing anymore' mode. I'm still finding it hard to express the actual feeling I had at that point, but I do know I don't want to experience it again, ever! Now I must say there is an element of guilt here, which is why I say respect you computer. I did close the lid with a little too much passion when a PDF failed to perform the right operation at a specific moment in time, and my patience was pushed to its limit. I am getting over it, as it is now up and running after a three week break, but I will cherish my lap top in future and handle it with kid gloves, being without it is just too unbearable! May is the month of Asparagus What can be more divine than freshly cooked asparagus spears dripping in butter? For best results cook asparagus as close to harvesting as possible. They can be refrigerated for 3 days or frozen after blanching for 4 minutes. Asparagus is best eaten steamed or boiled and served with butter. It is a useful addition to a salad or pizza topping. heesy leek & spinach pasta Ready in 2535 minutes Vegetarian Serves 4 Good knob of butter 1 tbsp olive oil 2 large leeks, total weight about 450g/1lb, thinly sliced 500g packets penne rigate or your favourite pasta shape 200ml tub crème fraîche 1 tbsp wholegrain mustard 125g packet Danish blue cheese, roughly diced 8 sundried tomatoes in oil, drained and thinly sliced 225g bag baby spinach leaves n Melt the butter with the oil in a large pan, tip in the leeks and splash in a little hot water. n Cover and cook over a low heat, stirring occasionally, for about 10 minutes until no longer squeaky. nWhile the leeks are cooking, boil the penne in salted water according to the packet instructions. nMeanwhile, tip the crème fraîche and mustard into the leeks, add threequarters of the cheese and season well. nStir until the cheese melts. Take off the heat. nDrain the pasta, reserving the cooking water. Tip the pasta into the sauce and stir, adding enough cooking water to make the sauce coat the pasta. nStir in the spinach, a big handful at a time, until it wilts. nToss in the remaining cheese and serve. Here's an old favourite using Organico Passata. La Puttanesca This delicious, very classic sauce brings together all the flavours of the southern regions of Italy. It is a combination of hot, strong, spicy and aromatic smells and tastes which blend into a really complex and delicious tasting sauce that is not only good on pasta, but also wonderful with grilled fish or chicken. This recipe really works every time, and you can vary the chilli and garlic levels according to personal preference. Serves 4 1 to 3 cloves garlic, peeled and crushed or chopped finely 8 tablespoons extra virgin olive oil 3 Fish4Ever anchovy fillets (either salted or canned in oil, rinsed and dried) 1 to 4 small dried red chili peppers, chopped finely 1 tablespoon rinsed and dried chopped salted capers 300 mls Organico passata Very large pinch dried oregano Sea salt and freshly milled black pepper 1/2 glass dry white wine Handful of stoned black olives Handful of fresh flat leaf parsley Method Fry the garlic and half oil together with the anchovy fillets and the dried chili pepper, until the anchovy dissolves. n Add the capers and the tomatoes and stir together really thoroughly. n Simmer for a few minutes, and then add the oregano, seasoning, wine and olives. n Stir and leave to simmer gently for at least 15 minutes, though if longer, it does no harm. n Serve over freshly cooked pasta, traditionally spaghetti, tossed together with a little extra olive oil and a generous handful of freshly chopped flat leaf parsley. n Grow Your Own Food Hoeing In dry weather get busy with the hoe as early in the day as possible to give sunshine plenty of time to shrivel up annihilated weeds. Pass the blade back and forth through the top layer of soil with small, smooth strokes. Keep it sharp with a small file carried in your pocket. Stopping regularly to keep the blade keen also allows you an opportunity to stretch your back. The hoe is number one tool in the battle with weeds throughout the summer. Personally, I love getting in amongst my crops, having a really close look all the time. I advise hoeing before you can see the weeds. with Dirty Nails Runner Beans Runner beans can be sown now. You could try `Enorma'; high yielding with long, straight beans of excellent flavour, or `White Emergo'; an oldfashioned, white flowered variety. It is prolific and tasty, as well as looking beautiful when in flower. Pop the chunky beans into small pots of compost, on their ends, 4cm deep. Place in the greenhouse or on a sunny windowsill and keep watered. They should sprout in a few days. Don't consider planting them outside until after midMay because they are very tender and easily killed by a late frost. A: Back in 2002 my husband, 3 children and I did a major downshift and turned to living very simply indeed. We gave a positive embrace to living with less in every aspect of our lives and it was an enormous challenge, but we were prepared to work hard at to make it work. The term downshifting has been around for ages though, I didn't coin it. It's often called voluntary simplicity too in the US. Finally a little something for the weekend... Here's a great tip to get started with. Ditch the Friday night pizza delivery and make some naked pizza with your partner instead! The dough is dead simple, just flour, warm water a little yeast and salt, then knead it whilst playing `Enchanted Melody' and reenact the pottery scene from `Ghost'! Leave it to rise a little while you get the toppings ready (the dough that is) and you'll have a great night in that you'll both remember for a fraction of the cost. Q: How do you relax? A: I turn the computer off, throw my phone in a drawer and head to one of my best friends with a new naughty nibbles. We sit in the garden or go to the beach and talk about all the important things in life (fair trade chocolate, recycling and the sharp decline in thinking women's crumpet) and generally put the world to rights. McAfee's "Carbon Footprint of Spam" An interesting study recently carried out by McAfee, the world's largest dedicated security technology company, calculates that the Global Annual Energy Used to Transmit, Process and Filter Spam Email Could Power a staggering 2.4 Million Homes. The new research found that spam email is not only a nuisance, but is damaging to the environment and substantially contributes to green house gas (GHG) emissions. It goes on to say the study highlights that spam has an immense financial, personal and environmental impact on businesses and individuals. I have been looking at ways to try and overcome this problem and have found a few ideas that are being used in other countries that might just work here. WiDrive? As cities around the world try to get cars off the roads, there's been increasing emphasis on public transportation, ridesharing, telecommuting and bicycling as ecominded alternatives. In San Francisco all employers with 20 workers or more are required to offer a transit benefit program to support greener commuting. With that in mind, Bauer's Worldwide Transportation recently launched WiDrive, a green, weekday bus service that offers highend transportation for commuters. Targeting professionals who wouldn't normally consider public transportation, WiDrive aims to emulate the comfort of a limousine or company shuttle. The opening was held with a little pomp and ceremony, with excited eyes and realised dreams. It has been 20 years since a few rail enthusiasts sat round a table and talked about resurrecting the `Welsh Highland Railway', and now that dream has become a reality. But it has not been plain sailing. Many farmers on the railway's route have fought a long hard battle to overturn the Act of Parliament that approved this fantastic feat of engineering. The railway track long overgrown had been adopted by many who had `made it their own'. These people were reluctant to return the land to back the railway. Objectors there have been many, but throughout the WHR have tried to consider the local residents who have been affected by the resurgence of the renewed narrow gauge rail line. The opening of the new stretch of line from Rydd Ddu to Beddgelert has been overshadowed by the inability of the railway to conclude the passenger line to Porthmadog, its final destination. This is because of a technicality between the WHR and highways department of Gwynedd County Council, who it seems were liable for some substantial costs on work undertaken at the bridge crossing at the station site in Porthmadog. They are making WHR accountable for the costs for which they have no budget. The tragedy of this is that what should have been a huge fan fare of a success story has become a damp squib. But what is so exceptionally short sighted to me is why Gwynedd County Council should want to shoot themselves in the foot. Snowdonia is dependant on the tourism industry, it is its lifeblood. The' little trains' as they are endearing called have a huge following. Not only will they take traffic off the already congested roads in the area, they offer tourists the chance to see an area of outstanding breathtaking beauty that could never be appreciated from the family car. All businesses local to the area can only benefit from this enterprise, it's a winwin situation. Am I a train enthusiast I hear you thinking. Well no I'm not, but what I see is here something positive, like phoenix rising from the ashes in an area that has seen a huge downturn in its tourism industry on which it depends. The completion of the railway has come at a perfect time for Snowdonia and I think it should be given all the support it merits.
